Coconut Milk Pudding

1 can coconut milk 1/2 can water 2 tsp unflavored gelatin powder

5 packages sweetener 1/2 tsp vanilla

Stir gelatin powder into the cold water. Combine coconut milk with sweeteners and vanilla. Bring the coconut milk to a boil, then slowly stir in the gelatin and water mixture. Refrigerate ate least four hours.

Serves 4.
