Almost Chili’s Lettuce Wraps

3T olive oil 1⁄2 onion – diced 1⁄2 red bell pepper – diced 3 stalks asparagus, sliced thin 2 celery stalks, diced 1 boneless, skinless chicken breast with all the fat trimmed off – cut in tiny pieces. 1 can water chestnuts 1/8 to 1⁄4 C lite soy sauce (to taste) 1/2 t ginger Cayenne pepper to taste 1 packet splenda or stevia plus Boston lettuce
Stir fry onion, pepper, asparagus, celery in the olive oil until almost done, then add the chicken. Continue to stir fry until chicken is cooked. (not long) add water chestnuts and soy sauce, stevia, cayenne. Cook until almost reduced (also not long).
Wrap in Boston lettuce and enjoy. You could probably cut up slivers of jicama to take the place of the little Styrofoam noodles.
