White Chili
1 Tbl. olive oil 4 skinless, boneless chicken breast-cubed 1 onion, chopped 28 oz. FF chicken broth or 2 small cans 1 (4ounce) can diced green chilies 1 tsp. garlic powder 1 tsp. cumin 1/2 tsp. oregano 1/2 tsp. dried cilantro 1/2 to 1 tsp. chili powder 1 24 oz. great northern beans or cannellini beans, drained & rinsed 2 green onions, chopped shredded co-jack or mont. jack cheese
Heat oil in a large saucepan over med.-hi heat. Cook chicken and onion in oil 4 to 5 minutes, or until onion is tender.
Stir in the chicken broth, green chilies, garlic powder, cumin, oregano, cilantro, and cayenne pepper. Reduce heat, and simmer for 15 minutes.
Stir in the beans, and simmer for 5 more minutes, or until chicken is no longer pink. Garnish with green onions and shredded cheese!
