Artichokes with Basil Mayonnaise

6 servings

1 cup mayonnaise

1/4 cup chopped fresh basil

1 TB fresh lemon juice

1 garlic clove, minced

6 10-oz artichokes, tips of leaves trimmed

Mix first 4 ingredients in medium bowl. Season with salt and pepper.

Cook artichokes, covered in a large pot of boiling water until tender when pierced w/ knife, about 45 minutes. Drain well.

Serve artichokes with basil mayonnaise.
