Garbanzo Crockpot Dinner
8 servings 1 lb dried Garbanzo beans, rinsed 3 cups low-sodium chicken broth or bouillon 3 cups water 4 large tomatoes, peeled, seeded, chopped 3/4 lb lean pork, cut into 1/2 inch cubes 3 oz prosciutto, chopped 1 onion, chopped 1 garlic clove, crushed 1 yellow or green bell pepper, seeded and chopped 2 teaspoons chopped fresh basil 1/2 teaspoon salt 1/8 teaspoon pepper 1 cup torn fresh spinach
In 3-1/2 quart slow cooker, combine all ingredients. Cover and cook on low 10 to 11 hours, until beans are tender.
