Herb Vinaigrette

1⁄4 cup tarragon, basil, or assorted herb vinegar 2 TB minced shallots 1 TB minced garlic 1⁄4 cup chopped fresh herbs (combine basil, tarragon, cilantro, parsley, oregano, etc_)

1 teaspoon salt

15 turns freshly ground black pepper _ cup extra-virgin olive oil

Combine vinegar, shallots, garlic, herbs, salt, pepper in a bowl. Slowly whisk in the oil and continue whisking until thoroughly emulsified. Can be refrigerated for up to 3 days.
