Tomato, Mozzarella, and Basil Salad

Ingredients

4 servings

4 medium ripe tomatoes

Salt to taste

8 (1/4 inch thick) slices fresh low-fat mozzarella

8 basil leaves, washed and dried

fresh ground pepper to taste

Extra virgin olive oil for drizzling

Instructions

1. Core and cut the tomatoes into 1⁄4 inch slices. Lightly salt, if desired.

2. Layer tomatoes, cheese, and basil on a platter and sprinkle with salt and pepper; drizzle with olive oil, and serve.
