Warm Greens with Herb Vinaigrette
Ingredients
1 TB olive oil
5 cups assorted greens (spinach, arugula, salad greens, etc_)
2/3 cup water
1⁄2 teaspoon salt
1⁄2 teaspoon white pepper
1 cup Herb Vinaigrette (below)
Herb Vinaigrette
1⁄4 cup tarragon, basil, or assorted herb vinegar
2 TB minced shallots
1 TB minced garlic
1⁄4 cup chopped fresh herbs (combine basil, tarragon, cilantro, parsley, oregano, etc_)
1 teaspoon salt
15 turns freshly ground black pepper
1 cup extra-virgin olive oil
Instructions
1. Heat oil in large skillet over medium-high heat. Add the greens, water, salt, and pepper, and heat, stirring gently until greens wilt. (about 2 min) Remove from heat. Toss with vinaigrette just before serving.
2. Combine vinegar, shallots, garlic, herbs, salt, pepper in a bowl. Slowly whisk in the oil and continue whisking until thoroughly emulsified. Can be refrigerated for up to 3 days.
